Bakery Style Rava Cake

 Perfect Recipe for a Delicious..Moist...Spongy & Bakery Style Yummy Rava Cake !

Ingredients :

Fine Rava (Sooji) - 1 Cup (If the Rava is not fine, grind it in a Mixer Jar)
Maida - 1 Cup
Powdered Sugar - 1 Cup
Curd (Dahi) - 1 Cup
Ghee - 1/2 Cup (Refined Oil can be used instead of Ghee)
Vanilla Essence - 1/2 tsp
Cardamom Powder - 1/2 tsp
Regular Eno - 1 Packet 
Note : Use Measuring Cups for Measuring the Ingredients 

Method :

1. In a Mixing Bowl mix Curd till it is Smooth with the help of a Whisk. 
2. Gradually add in the Powdered Sugar.
3. Add Ghee in it and mix well till all the 3 Ingredients are Combined well.
4. Add Rava & Maida in Small portions and Mix well.
5. Now add Milk while mixing the batter till it is thick. Cover & Keep it aside to rest for 30 minutes.
6. After 30 Minutes, batter becomes Slightly thick as the Rava will absorb the milk in it. Add more milk and adjust the Consistency. Batter should be thick, Ribbon Consistency like normal cake batter and not too runny.
7. Add Vanilla essence and Cardamom Powder. 
8. Grease a Cake Tin with oil/butter, dust little Maida and tap off the excess Maida.
9. Add Eno in the batter & few drops of water on it and mix the batter well. ( Do not over mix )
10. Pour the Batter in the Cake Tin, tap 3-4 times and keep it in a PreHeated Pressure cooker for about 30-40 minutes on a Stand/Cooker plate. (Remove the Cooker’s Whistle and do not cover the Cake Tin)
11. Insert a toothpick/knife in the middle of the Cake and check if it comes out clean. 
12. Demould the Cake once it has Cooled Completely.
