Eggless Banana Sponge Cake

 Spongy..Soft & Delicious Tea Time Cake..A No fail Recipe with Perfect Measurements !!

Ingredients :
 
1 Medium Size Banana/2 Small Size Bananas
Plain Flour (Maida) - 1 Cup
Wheat Flour - 1 Cup
Refined Oil/Ghee/Butter - 1/2 Cup
Milk at room temperature.
3-4 Drops of Vanilla Essence 
Sugar - 1 Cup
Regular Eno - 1 Sachet
6-8 Inch Cake Tin/Round Aluminium Vessel

Method :

1. Blend the Bananas & Sugar in a Mixer Jar to a Smooth Paste. Take it out in a Mixing Bowl.
2. Add Oil in it and Mix well till it is well Combined. 
3. Now start adding the Plain flour & Wheat flour gradually. 
4. Add Vanilla Essence. Gradually add Milk while checking the Consistency of the Cake Batter. It should be in Ribbon Consistency.  
Note : Mix the Batter slowly in one direction with cut and fold method. Do not over mix. 
4. Remove the Cooker’s Whistle and Preheat the Cooker for 10 minutes.
5. Grease the Cake Tin with Oil/Butter and dust little Maida. Tap off the excess Maida.
6. Add Eno in the Cake Batter and mix it well evenly. Do not over mix.
7. Immediately transfer the Batter to the greased tin and tap it 4-5 times.
8. Place the Tin in the Pre heated cooker and cover the cooker with its lid. Do not keep lid on the Cake Tin.
9. Keep this on a very low flame for about 40 minutes. Post that check with a tooth pick, if it comes out clean remove the Cake Tin and let it cool completely at Room Temperature. 
Note : Baking time can vary according to the size of the Cake Tin & Gas flame.
10. Demould the Cake once it has Cooled Completely.
